Pep up your life with frozen peppers!

What does a gal do when she has an amazing pepper harvest?!?!

FREEZE THEM!

This year I am trying something new and it’s working.  I am looking forward to using these green pepper strips for fajita’s, tacos and casserole dishes throughout the winter.  This is my first picking of the fall and will have at least two more batches to freeze in a few weeks.

Here’s how I’m doing it.

  1. Harvest your peppers.
    • I am only freezing my green bell peppers.  I will be trying something different with the Jalapeno’s…. stay tuned 🙂
  2. Wash them thoroughly under warm water and let dry.
  3. Remove the core and seeds using your method of choice.
    • I find it easiest to cut the top off and use a spoon to remove the inside bits.
  4. Cut into long thin strips or dice into 1/2 inch bits.
    • This all depends on what type of dish you plan to create with your frozen peppers.  I prefer long strips as I can always cut finer after freezing.
      • Examples
        • Long Strips: Fajita’s, Taco’s, Stir Fry
        • Small Bits: Goulash, Casserole Dishes
  5. Line a baking sheet with parchment paper and spread your peppers. 
    • The goal of this step is to allow your peppers to freeze without sticking to one another.  Making it easier to simply grab the amount needed for your recipe without thawing more than necessary.
  6. Place in freezer for 2-3 hours until completely frozen.IMG_0689
  7. Remove frozen peppers from the freezer and place in freezer bags. 
    • I chose quart bags because I have 200+ baggies due to my latest Sams club run… Score!
  8. Do your best to squeeze as much air out of the baggies as possible before returning them to your freezer.IMG_0697
  9. When ready to use, simply remove the amount needed from the freezer and add to your favorite dish before cooking/baking.  Peppers will have a soft texture when thawed so eating them raw is not recommended…. unless you’re not picky about having a crunchy pepper to gnaw on.
    • QUICK TIP: If you need to chop your strips into smaller pieces, do this while they are still frozen.  It works incredibly well 🙂
